A new, health-focused fast-casual restaurant, CoreLife Eatery is now open in Greenville. The location at 1174 Woodruff Road is one of 10 that franchise owner Jon Wood plans to open in South Carolina. Wood, who left a background in commercial real estate to try his hand in the restaurant business, purchased the rights to all of South Carolina.
He sees potential for at least three locations in the Greenville area.
CoreLife, which started in Syracuse, New York in 2015, marries healthy eating with fast service, Wood said. The restaurant started in 2015 and has since grown to 60 locations, but the company plans to open as many as 300 more locations in the next five years.
For Wood, the appeal was the food.
“I’m a big eater,” he said with a chuckle. “I love food.”
And with CoreLife, he added, he can eat a lot and still feel rather virtuous.
The majority of the CoreLife menu is designed to maximize flavor while also maximizing health benefits. Consumer Reports recently recognized the brand for its healthy food offerings.
Those offerings include wholesome greens and grain bowls, broth bowls as well as protein plates, and new this year, tacos, all made from scratch.
The menu spans a variety of flavors from a Thai chicken and rice noodle bowl and a sriracha tofu ancient grain bowl to a Mediterranean salad bowl with falafel and a Korean BBQ pork bowl.
“Our restaurant is not an easy restaurant to run because we have a scratch kitchen,” Wood said. “It’s intentionally healthy. A lot of it is sneaky healthy because it’s also so tasty.”
In other words, it’s not just about salads here, although you can get some tasty ones. The restaurant serves ahi tuna, grass-fed steak, antibiotic-free chicken, whole grains, fresh veggies, and bone broth. Even the mac and cheese is gluten-free and made with a cauliflower puree.
“You would never know when you’re eating it,” Wood assured.
Wood signed the deal with CoreLife in spring 2019, settled on the location in Greenville in Summer 2019, and was set to begin construction in March 2020. And then, well, we all know what happened then.
The pandemic has slowed things a bit, but not by much. The fast-casual structure, which lends itself easily to takeout and delivery helps.
The 3,400-square-foot location in Greenville also features a sizable outdoor patio, Wood added.
The restaurant officially opens on Dec. 4. Hours are 11 a.m. – 8 p.m. daily.
