Working on building a healthy lifestyle and coming up with healthy food ideas can be difficult for anyone. Yes, it may be a challenge, but in life, all things come with a challenge. Eating healthy can always seem like a stressful and unpleasant thing, but I only think that’s the case when you let it be.
Don’t let your mind take over and present those unhappy thoughts about eating healthy, filter those negative thoughts out. Think about how it will feel in the long run and how, once you maintain this habit, it will be something that you can quickly put into your day to day routine.
Instead of looking at finding healthy food ideas as a daunting task, create a good practice and make healthy dishes fun just in the same ways you may enjoy making brownies or cookies.
For this week, we are going to be cooking up some meals that everyone will enjoy. Trying to find a simple and healthy meal idea can be difficult, and some might not be what you’re looking for, but here are two meals that anyone can enjoy and that you can pair with any healthy side dish.
¼ cup balsamic vinegar
1 Tbsp raw honey
1 Tbsp wholegrain mustard
2 cloves garlic, finely chopped
1 Tsp finely chopped fresh rosemary
4 (4-oz. each) raw chicken breast, boneless, skinless
½ Tsp sea salt (or Himalayan salt)
½ Tsp ground black pepper
2 Tsp organic butter
Take a large mixing bowl and add your vinegar, honey mustard, garlic, and rosemary and whisk those ingredients all together once finished set aside. Then you are going to season your chicken breasts with salt and pepper; then, you are going to get a medium skillet and melt your organic butter over high heat. Once melted, add your chicken and cook for two minutes on each side or until brown reduce heat to medium. Then you’re going to add your vinegar mixture and cook the chicken, turning it every few minutes or four to five minutes until its finished, and your sauce has come to a glaze. I usually add some baked vegetables like asparagus or zucchini as a side dish.
Braised Italian-style Pork Chops
1 tbsp olive oil
4 (¼ lb) lean boneless pork chops
¾ tsp salt
¾ tsp black pepper
1 onion, chopped
1 red or green bell pepper diced
2 large garlic cloves thinly sliced
1 cup spicy tomato sauce
Instructions: You are going to take a nonstick large skillet oil it and place it on medium to high heat. Then you are going to season your pork chops with salt and pepper and put them into the skillet cook about three minutes on both sides and until browned. Once you are finished cooking your pork plate and then place your onion, bell pepper, and garlic into the skillet for about three minutes, then you are going to add the pork chops back into the skillet. Then pour in your tomato sauce—Cook for about five minutes.
