Scores of Big Apple eateries are evaporating amid the coronavirus crisis. “It’s been really hard,” says Kim Paradis, owner of this small neighborhood joint near Union Square. “We’re definitely not profitable.” Sales are down at least 70% since the COVID-19 pandemic hit New York, and without a bump in orders or government help, the restaurant will likely close within a few weeks. Even staying open that long “would mean digging into my personal savings,” adds Paradis, who founded the business a decade ago.
Paradis To Go serves up a daily-changing menu. On Friday, April 10, that means roast beef, hot cross buns and carrot cake: perfect for Easter. Kim Paradis calls her speciality “comfort food that’s healthy and recognizable and makes you feel good.”
Raised by a single father, Paradis grew up on “standard 1970’s fare.” Her foray into the food business began after college, when she worked in Seattle overseeing a program that connected local chefs with grade schoolers.
She then flew back to New York City for culinary school and worked her way through the industry: as a restaurant cook, food stylist, caterer and even, for one summer, a private chef in St. Tropez.
There she met her husband, Mickael, a French-trained butcher, who helped her open Paradis To Go. (Kim is now the sole owner, with Mickael focused on other projects.)
Today, with New York City largely shuttered, Paradis is hoping to land a small-business loan or grant from the government. Until then, her staff will keep cooking as long as financially possible: “The generosity and happy faces that come to pick up orders make it worth it,” she says.
