Inspired by R2-D2
1 cup low fat plain Greek yogurt
1/2 tablespoon maple syrup
1/2 teaspoon vanilla extract
1 cup finely crushed graham crackers, divided
1/2 DOLE® Banana, peeled and mashed
1-1/2 cups DOLE Pineapple, cut into ½-inch cubes
2 tablespoons unsweetened coconut flakes, toasted
Combine yogurt, maple syrup and vanilla extract in small bowl. Whisk to blend.
Combine ½ cup graham cracker and banana. Mix until smooth. Divide mixture between 4 glasses or mason jars.
Top with pineapple, yogurt mix and remaining ½ cup graham cracker, alternating until you reach the top of the jar, finishing with the yogurt. Sprinkle with toasted coconut and serve.

4.5 to 5 oz. dry soba noodles
2 tablespoons smooth peanut butter
2 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1 tablespoon honey
1 tablespoon lime juice
1 clove garlic, minced
2 cups skinless and boneless rotisserie chicken, shredded, warmed
2 cups DOLE® Cauliflower florets, steamed
1 cup DOLE Pineapple, cut into cubes
1 teaspoon sesame seeds
2 tablespoons chopped DOLE Green Onions
Cook noodles according to package instructions. Drain noodles and return to the warm saucepan.
Add peanut butter, soy sauce, sesame oil, honey, lime juice and garlic to noodles.
Stir until sauce is creamy and the noodles are evenly coated with sauce.
Divide noodles between four bowls.
Top each serving with warm chicken, cauliflower and pineapple. Sprinkle sesame seeds and green onions on top.
Noodles may also be served cold.
Tatooine Blue Milk
(Coconut banana smoothie inspired by Luke Skywalker and the Millennium Falcon)
1 cup unsweetened lite coconut milk
2 Dole bananas, peeled
1 tablespoon maple syrup
½ teaspoon cinnamon
1/8 teaspoon Vegan blue food color (GMO free)
Place all the ingredients into you blender and puree until smooth.
