Easy, healthy, and delicious — this low-fat stir-fry beets & carrots
recipe makes for the perfect quick meal after a busy day. All this recipe
requires are a few simple ingredients, a sauce pan, and less than 30
minutes of your time.
Stir-Fry Beets & Carrots — makes 3 servings
• 2 medium beets, sliced
• 3 medium carrots, sliced
• 3 garlic cloves, minced
• ¼ cup of fresh basil leaves
• 1 splash of lemon juice
• ¼ teaspoon of chili powder
• Dash of salt & pepper
• 1 tablespoon of olive oil
In a large saucepan, heat olive oil over medium-high heat. Add carrots and
beets and sauté until soft (10-15 minutes). Remove.
Add to the same pan, basil, lemon, onion, garlic, chili powder, salt, and
pepper. Cook for about 5-7 minutes.
- Add carrots and beets back to the pan and cook for 3-5 minutes.
